Chicken
1 lb skinless chicken breast- slice into bite-size pieces
Chicken Marinade
1/3 tsp salt * 1/3 tsp pepper * 1/3 tsp baking soda * 2.5 tsp cornstarch * 1.5 tbsp Chinese cooking wine
Sauce (pre-mix set aside)
1.5 tbsp soy sauce * 1 tbsp oyster sauce * 1 tbsp hoisin sauce w1 tbsp ketchup * 1 tsp sesame oil * 2 tbsp water
Veggies
2-3 tbsp vegetable oil * 1/2 bell pepper (red or green), bite-size pieces * 2 stalks celery, bite-size pieces * 1/2 cup green onion sliced * 3 cloves garlic thinly sliced * 1/8 cup ginger thinly sliced * 1/2 cup toasted cashews
Cook
Incorporate sliced chicken into marinade and set aside for 3 min
Add oil to high heated pan, stir in chicken cooking half way (3 to 4 min) and remove.
Lower to medium heat (oil as needed), sauté veggies (except cashews) for 3 min
Add back chicken and add sauce, cook for another 3 min constantly mixing
Add cashews, mix well together for 1 min
Serve with steamed white rice – Enjoy!
